GREEN LENTIL CAKE CANDIED DRIED FRUIT WITH GINGER

Ingredients :

  • 100g lentils
  • 175g flour
  • 3 large eggs
  • 100g of sugar
  • 10g grated/ground ginger
  • 80g dried fruit
  • 1 tbsp baking powder
  • 3 tbsp olive oil

Necessary equipment

  • Cake mold

Rinse the lentils. Cook the lentils over low heat for 15 minutes in water. Preheat the oven.

Drain the lentils and pass them through a food mill or blender. Set aside.

Mix the flour, baking powder, and ginger. Cut the candied fruit into small cubes.

In a bowl, whisk the eggs with the sugar and olive oil. Add the lentil puree and mix gently.

Add the flour, baking powder, ginger, and candied fruit to the mixture. Pour it into a greased cake tin.

6.

Bake in a preheated oven at 180° for 40 min.
