Coral Lentil Rillettes

Ingredients :

  • 200g red lentils (soaked the day before, cooked, and drained)
  • 80g hazelnuts roasted
  • 20g blanched almonds
  • 1 chopped yellow onion
  • Grapeseed oil
  • 1 lemon juice
  • Salt, pepper and chili d’Espelette
  • Nutmeg
  • 1 tbsp. tbsp Kikkoman soy sauce

COOK the lentils in water with salt and pepper and drain well.

2.

Brown the caramelized onions in grapeseed oil.

3.

PUT all ingredients into a blender until coarsely chopped.

4.

ADD a little red lentil cooking juice for desired consistency.

5.

SERVE chilled.
